Chicken and Strawberry Salad

Heather, I need a salad that tastes like spring. Try this chicken and strawberry salad! Warning, this one contains nuts. 

Fill your bowl halfway with arugula and spinach. Add in cooked, shredded rotisserie chicken. Then add chopped strawberries, walnuts, and almonds. 

If you like, add a vegan feta cheese as a topping. I use a crumbly sheep’s milk cheese, which is very much not a vegan cheese but is dairy free.

For a poppy seed dressing, combine ¾ cup of mayonnaise and 3 ½ tablespoons of sugar. Add in 2 tablespoons of apple cider vinegar, 2 teaspoons of poppy seeds, and ¼ teaspoon salt. Whisk all together, and pour onto the chicken and strawberry salad when you are ready to serve!
